Fatt choy is a kind of moss and this photo doesn’t look especially appealing but Nom really liked it so I’ll post a recipe here. Do try, so incredibly yummy with white rice and tastes of home. All of the ingredients are variable and I don’t really measure the seasonings, just go according to your taste :)

12 dried shiitake mushrooms (soak till softened and trim stems)
9 dried oysters (rinse and soak together with scallops)
3 dried scallops
400g pork belly (slice into small to medium chunks)
2 tbsp oil
5 slices ginger
3 cloves garlic
1 clove shallot
small handful of fatt choy (soak for 30mins)

2 tbsp oyster sauce
dark soy sauce
light soy sauce
1 tbsp chinese wine
1 tsp sesame oil
1 tsp sugar
white pepper

1tbsp cornstarch dissolved in abit of water

1. Heat oil in a medium-sized pot and stir-fry shallot, ginger and garlic till fragrant.

2. Add in pork belly and make a few quick stirs till browned and then add in the mushrooms, dried oysters and scallops.

3. Add all of the seasonings in, mix well and pour enough soaking liquid and water to cover the ingredients.

4. Cover pot with a lid and simmer for 45mins to an hour

5. Add in the cornstarch mixture, stir well and let the fatt choy cook in the pot for another 5mins before serving.

The meltingly tender pork and other braised ingredients are so intensely flavourful together, reminds me of home and Chinese New Year. Om nom nom enjoy!
